Lines of Research
The research activities of the group focus on some macro-topics in the field of nutrition.
Food consumption assessment:
- Detection of food consumption and eating habits through food diaries, 24-hour recall, and consumption frequency questionnaires;
- Nutritional and environmental assessment of diets and consumption patterns;
- Evaluation and validation of biomarkers of food consumption;
- Development of nutritional databases (fiber, phytochemical compounds, and other compounds of nutritional interest).
(Poly)phenols, other bioactive compounds and personalized nutrition:
- Metabolism and bioavailability in human, animal, and cellular models;
- In vitro digestion and colonic metabolism;
- Development and validation of LC-MS methods for the analysis of phenolic and other phytochemical compounds;
- Health effects in different experimental models;
- Intra-individual variability in metabolism and physiological response;
- Personalized nutrition with bioactive compounds.
Carbohydrates and fiber:
- In vitro bioaccessibility of starch;
- Glycemic index of foods;
- Effect of fiber on colonic metabolism of bioactive compounds.
Promotion of healthy and sustainable diets:
- Nutritional education programs for different population groups;
- Nutritional coaching and nudging for the promotion of healthy and sustainable food choices;
- Development of ICT applications for edutainment, coaching and nutrition education
