Lines of Research

The research activities of the group focus on some macro-topics in the field of nutrition.

Food consumption assessment:

  • Detection of food consumption and eating habits through food diaries, 24-hour recall, and consumption frequency questionnaires;
  • Nutritional and environmental assessment of diets and consumption patterns;
  • Evaluation and validation of biomarkers of food consumption;
  • Development of nutritional databases (fiber, phytochemical compounds, and other compounds of nutritional interest).

(Poly)phenols, other bioactive compounds and personalized nutrition:

  • Metabolism and bioavailability in human, animal, and cellular models;
  • In vitro digestion and colonic metabolism;
  • Development and validation of LC-MS methods for the analysis of phenolic and other phytochemical compounds;
  • Health effects in different experimental models;
  • Intra-individual variability in metabolism and physiological response;
  • Personalized nutrition with bioactive compounds.

Carbohydrates and fiber:

  • In vitro bioaccessibility of starch;
  • Glycemic index of foods;
  • Effect of fiber on colonic metabolism of bioactive compounds.

Promotion of healthy and sustainable diets:

  • Nutritional education programs for different population groups;
  • Nutritional coaching and nudging for the promotion of healthy and sustainable food choices;
  • Development of ICT applications for edutainment, coaching and nutrition education
